Excellent recipe. This is one of the finest roast chicken dinners I've ever made. It made me think of a fabulous french bistro item. I add sage compound butter under the loosened skin along with some turkey rub. I also rubbed the skin with a little olive oil before placing the fresh chopped rosemary, thyme and Tone's Rosemary garlic seasoning on t"
