Reviewed orzo with roasted vegetables

Apr 8, 2014 on FoodNetwork.com

I had to make a few dietary changes, but flavor profile works very well. I used Farro instead of Orzo (certainly not the same, but healthier), and I cut the oil down to two TBSP (one for roasting and one for dressing). Also used less feta and used a reduced fat version. Even with the substitutions, this dish was excellent.

Excellent!! If I'm being honest this healthy eating thing is new to me, so I was skeptical. I put extra curry paste, personal preference, otherwise followed directions. I thought that the lime and cilantro really brought it all together.

My sister found this recipe and made me promise that I would try it. I hesitated because I have always used the same recipe. I always preferred my meatloaf with gravy and no ketchup! This recipe was delightful, I couldn't believe how moist it was. The sauce was perfect too. I added 1 tsp of season salt instead of 1/4 tsp that the recipe called for,...

I wowed my husband with this one. Only change I made was to leave out the celery (personal preference). This tasted like a gourmet meal. Thank you!

This is a wonderful dish. Loved it! I didn't have Fontina or Mozzarella, so I used the cheddar, montery jack blend that I had. I am sure it would be more elegant with the cheeses in the original recipe, but that's what I had on hand. It turned out moist, creamy, and delicious.

Loved it! My husband said it was just okay, but he had three servings of it. You are a Super Star Chef Anne. Thank you! "

Terrific!! I could not find fleur de sel, so I substituted kosher salt (same measurement), and I thought the seasoning was perfect. My husband is not the salt fan that I am so I simply omitted the salt completely from his steak. Tender and delicious with a nice bite from the peppercorns. I am making them again tonight."

WOW! This dish was terrific! I don't usually rate recipes unless I follow them exactly, but I am making an exception. I wanted beef and green peppers; I found this recipe! I did not have any canned tomatoes, so I substituted a half of a can of tomato sauce and a half of a can of salsa. I also used beef broth instead of water. Wonderful, thank you...
