I just made this. I used boneless thighs instead (15 pcs) and adjusted 5 pcs of bacon, wine and stock to 1 1/2 cups each. Simmered on stove 5 minutes and oven time 30 minutes. Otherwise everything the same. Family raved. Sometimes they complain that the dishes that use a lot of wine is too "winey". This was perfect. Right amount of smokey...
