This recipe has spread like wildfire amongst my friends that I've made it for. DELICIOUS! Using good-quality sun-dried tomatoes is key. Also, I use Israeli Feta (a little creamier than regular feta), and this makes the tanginess of the tomato really stands out. ""

To Paula - I made the sauce without the chicken, and served a little over a grilled pork tenderloin. For leftovers, I smothered grilled chicken burritos with the mole sauce and it was soooo gooooddddd!!!!!

I LOVE mole, but it's just too much work to make. This is quick, easy, tasty, and healthy. Very flavorful, with a nice sweet, spicy kick.
