My Activity

Reviewed Gazpacho

"Gazpacho is one of my favorite things and this recipe is awesome. It was a little too sweet, so I will cut back on the sugar next time, but adding some extra Tabasco and salt made it perfect. I didn't add any of the toppings because I am dieting, except for my one favorite Gazpacho topping.....low fat sour cream! Just a dollop adds a wonderful "

Reviewed Lentil Quinoa Salad

"This is fabulous as is - warm, room temp or chilled. But it is also a great base to add whatever you love best. If chilled, I would add some diced red pepper and cucumber. Be sure to check your salt and pepper because you want to have enough to bring out all the other flavors without over powering them. I am passing this on to my vegetarian, co"

Reviewed Simple Perfect Enchiladas

"This recipe was awesome! I don't understand any of the comments saying it was soupy. I bought the extra large corn tortillas which are better for enchiladas, 7 1/2 inch diameter. I cooked the sauce as directed and let it thicken and my only complaint was that there was not enough sauce! I bought another can for the leftovers and it was perfect."

Reviewed Prairie Sushi

"Another great recipe that can be modified to meet everyone's taste. With a family of 6 we usually have a variety of veggies and meats on hand. The cream cheese and tortilla base is so delicious and then we added turkey or ham or bacon, also added some avacado, lettuce and tomatoes to make a vegetarian version. It was a delicious and fun change "

Reviewed Kid Friendly Pasta Salad

"This is a great, simple pasta salad to be enjoyed by all. I didn't have grape tomatoes, so just used roma tomatoes. I added a can of sliced black olives because we love them. I think this is a fantastic base and you could add anything you really like. We did not have any short pasta, called 3 friends and no one had any, so I made it with spagh"

Reviewed Burrito Bowl

"This is absolutely delicious. I made it for the 3rd time today and still a huge winner. I have a big family so use more meat, rice and double the pico de gallo. There are several steps, but you can do most of the work in the morning and just assemble at the end. You can make the pico de gallo ahead and leave out the avocado and cilantro till th""

Reviewed Sunny's Monte Cristo

"This sandwich is fantastic, especially together with the roasted tomato soup. The challah bread makes the sandwich. We skipped the cranberry sauce, used the mayo on both slices of bread, then served with assorted jams on the side so each person could choose what they wanted.""
