"Very satisfying and a great change of pace from the regular quick meals I make. I suggest cutting everything ahead of time since it does cook quickly and then enjoying a glass of wine while you drop it in the pan. I did substitute half of the water with some chicken broth for added taste and sliced french bread, brushed it with olive oil and baked it for a couple minutes to ensure the bread was very crunchy. I am excited to make this again!"

Reviewed Turkey Cacciatore Burgers on Portobello "Buns"
"This is one of the most flavorful turkey burgers I've tried. Full disclosure: I didn't use mushrooms in the burger or as the bun since I don't like them. In the future I will add a bit of homemade dried bread crumbs so the burger is more solid and doesn't crumble. Turkey burgers with added moisture from onions and peppers, in my opinion, could benefit from adding a bit of a binder."

"Yummy on a cold day. It doesn't taste like Panera but it does taste homemade which makes it pretty satisfying. I did use fat free half and half (it was all that was available at the store) so I'm sure it would be even better if you used regular or even heavy cream. "
Reviewed Low-Fat Scalloped Potatoes
"The recipe says to cook the potatoes until they are just tender (8-10 mins). I waited for the water to boil, cooked them longer than 10 mins and still after baking in the oven the potatoes were too firm. I even sliced them thin with a mandolin slicer. I would advise boiling the potatoes longer and cooking in the oven on 400. Additionally the flavor was a bit bland even for being low-fat.
Reviewed Salmon Kebobs with Quinoa and Grapefruit Salad
"The salmon was nothing exciting but it paired really well with the quinoa and grapefruit salad. The salad was bright and fresh tasting and the vinegar and citrus really worked well with the spicy jalapeno. Although a bit labor intensive, this is definitely a keeper.
Reviewed Quinoa Pilaf with Pine Nuts
"Great intro to quinoa for those who haven't tried it. It makes for a a very simple side dish and you could even eliminate the pine nuts to save a few dollars and it would still be good. I would also advise if you are trying to limit your sodium you could easily sub water for some of the chicken broth and you wouldn't notice the difference.
