This is one of my favorite recipes. Easy to make vegetarian by using baby portobello mushrooms instead of the beef. Brown them as you would the meat first and then add them. The first time I made it, thought it was too greasy/oily and not quite the right taste for me. Second time, didn't add the olive oil drizzles, added an extra cup of corn and one less garlic clove. Great recipe, just might need to tweak it a bit for your taste (like any recipe). Always love Giada's recipes."
