These were very flavorful on their own, so they didn't require dipping in sauce. It took a good 20 minutes of braising for them to soften up. I also dipped the knife in the acidulated water to help prevent browning. It was amazing how quickly they turned brown."

My husband said I outdid myself. In an effort to make comfort food as healthy as possible I used canola oil instead of bacon drippings and spooned off the excess fat after baking. It was wonderful.
