Reviewed Southern Cornbread Stuffing

"I just think that those who didn't like this recipe must have messed with it! This comes out perfect every time!!

DONT mess with the liquid to bread ratio; DONT use fresh bread; DONT expect it to taste like that nasty stuff out of a box. It's not supposed to!!

Also, cornbread from a mix should be outlawed and anyone using white (bleached, processed, and tasteless) cornmeal should be arrested.

Reviewed Good Eats Roast Turkey

"To: Rolly

You probably could have waited until Sunday or even Monday morning to start thawing your bird, but as long as you make sure you are keeping it good and cold (many newer refrigerators have a built-in thermometer) everything should be okay. You can double check me on this, but I think you should probably aim for somewhere around 40 degrees F for storing the bird until you're ready to brine. Also, it's not mentioned in the recipe, but since I brine overnight, I actually add some extra ice before I go to bed, just to insure that my turkey doesn't get into the bacteria-growing temperature range.
