My Activity

Reviewed Banana Nut Muffins

"Yummy! I only used 1 1/2 cups of flour, 3 really ripe bananas, 1 1/2 tsp of vanilla, added 1/2 tsp of cinnamon, 1/2 tsp of nutmeg and left out the nuts (everything else the same). Only made 12 muffins. Kids loved them. Good base recipe."

Reviewed Grilled Chicken Breasts with Spicy Peach Glaze

"The glaze for this recipe is AMAZING! I didn't grill the chicken. I just sauted a few thin boneless chicken cutlets with salt and pepper, set them aside and heated up 3/4 of the glaze under low heat and added them in to coat. The kids loved it. Served with Jasmine rice & peas n carrots. I plan on using the leftover glaze on saute shrimp w"

Reviewed Roasted Chicken with Balsamic Vinaigrette

"No Wow! Factor, could be that I used boneless, skinless, chicken breast. I did let the chicken marinate overnite, it had flavor but I thought it would of been better with all the great reviews.

I just reduced the drippings and didn't bother with the sauce. Will not make again."

Reviewed Pork Chops Stuffed with Sun-Dried Tomatoes and Spinach

"Could be my taste buds, thought this recipe was just okay. Not really worth the effort. The filling is tasty - could be better with chicken I guess and since I don't like goat cheese, I used ricotta & cream cheese combo instead.

The mustard lemon sauce helped but I won't make this again."

Reviewed Texas Oven-Roasted Beef Brisket

"Great! -- Only used 1TB of salt and by mistake added 1TB of paparika. Also placed under the broiler for few minutes to crisp up the outside. Thanks Paula!""

Reviewed Cannoli-Stuffed French Toast Nuggets

"I really like this idea so I made a similiar version not as figure friendly but very tasty. My version came out to 8pts per serving. Used real sugar, one egg, splash of lowfat milk, 1/2tb ICBINB, 1tb regular syrup. Doubled the cinnamon 1/2tsp and only added 1/2 tsp vanilla to egg dip.

Reviewed Double-0-Cinnamon Apple Breakfast Bowl

"I don't eat fat free foods so I just used low fat cottage cheese with pineapple, added everything else except the sweetner. Surprisingly, it was very good and filling. "
