"Tried it yesterday for a a family dinner. It was rich and a little too sweet for my taste. Also, when dipping the lady fingers don't dip too long. I did and it became a little to soggy and watery. I think it would be better to dip a pastry brush and brush the coffee solution on. The cookies really soaks it up fast.

Reviewed Excellent Meatballs

"Meatballs were alright but needed more flavor, ie, italian spices. Others have said it was too salty I just don't use a lot of salt period so I err on the side of caution on most recipes until I taste it. I only used ground pork, and beef, I don't do veal. I baked them on my broiler pan and let the fat drain through. As for the sauce I used my own homemade tomato basil sauce that I made last year and canned myself. We had a bumper crop of tomatoes in garden that year. I just add the appropriate amount of spices and a little red wine to sauce and reduce.

Reviewed Meyer Lemon Ricotta Pancakes with Macerated Strawberry Coulis

"I made them this am and thought they were very good. However I agree with the person that said to cut down on the flour and that they were a little too cake like. This receipe makes lot of pancakes, more for a brunch with more people, will probably cut it in half next time. I also improvised a couple of other things. I used cottage cheese instead of ricotta and run it through the blender first. I have substituted cottage with cheese cake and lasagna it works. Also had blueberries instead of strawberries. They have a nice lemony flavor and then when you dust them with powdered sugar it brings the two flavors together. Husband loved them. I wonder if a person could thin them way down and make crepes. Think I will give that a try next time.

Reviewed Herbed Pork Paillards with Sundried Tomato Butter and Asparagus

"Very good and easy to make. The portions were just right for 2 people. I made the compound butter ahead of time. Instead of salt and pepper I used a little Mrs. Dash on pork along with the flour. Very tasty. My husband and I both have to watch our sodium intake, but especially him. I boiled some small red potatoes to have with it, the compound butter was good on that too. I also squeezed some lemon juice on the asparagus and a pinch of dill. Very good meal. I am doing the Turkey dinner tomorrow. All of the recipes from Worst Cooks in American are pretty easy. As for the person who couldn't understand why those people on the show couldn't follow the instructions. We all have our strengths and weaknesses and we all started somewhere. We love the show by the way.

Reviewed Seared Halibut with Sauteed Swiss Chard and Salsa Cruda

"Made this for dinner tonight. My husband and I both liked it. It was easy to prepare and it came out just the way it was suppose to. I think it is a good thing that someone is stepping up and trying to teach people to cook with fresh instead of pre-packaged ingredients that are full of lots of sodium and other things that are harmful to people in general There would be a lot less overweight and unhealthy people. Hats off to Anne Burrell and Robert Irvine and all the others that do this kind of thing. I am a big fan of Food Network channel and have tried various recipes with relatively good results. It is trial and error like anything else. Some are good and some not so good. But if you know ingredients and seasonings it takes most of the guess work out of it. Some people don't know.

Reviewed Gina's Pumpkin Cheesecake

"I made this for dinner at my stepdaughter, and her husbands. I am a good cook but her husband has seemed to be among my worst critics also my grandson. This is a farming family and unless you make a white or chocolate cake with real whipped cream frosting your not excepted .It was a big thumbs up from the grandson and his dad had a second piece. My husband also liked it very much. A big winner all around. A friend of mine wants me to make one for a luncheon she is having soon. I have made cheesecakes before and shared with her and she loved it so this one will be a big hit with her guests I am sure. The only thing I found was it took longer than 1 hour and 20 minutes. Perhaps stoves and ovens as far as heat can be different. Otherwise it was great. Thanks Neelys.

Reviewed Quick Pear Tart

"Made this for a quick breakfast with milk for my husband and I. We sometimes do that and have a bear claw and a piece of fruit with small glass of milk for breakfast. Thought it was good, however puff pastry didn't puff like it should. Bought it at local grocery store and have had problems in past with things not being the freshest. At any rate we did enjoy it and my husband said he would eat it again after a light meal with ice cream. I like to find different things that are quick and easy for breakfast in stead of the usual bacon/eggs, cereal. I am always looking for something different and not too heavy.

About Me

I'm 67, married to a retired dairy farmer.  I work for myself still doing upholstery, draperies, and other home dec items.  I love DIY projects and  I am about to tackle my kitchen so I can have more counter space to cook better meals.  My father was an excellent cook, he enjoyed it immensely.  Most members of my family are good cooks.  I have one nephew that cooks for a whole crew on an oil rig,  but my older brother couldn't boil water.  So I sent him a cook book entitled "A Man A Can and A Plan".  Hope he uses it.
