Love this soup. I use double the carrots, half again as much broth and water, more spinach, and eliminate the peas (they lose their color and don't add much to the recipe). I also minced the lemon zest this last time. The little bits of it in a bite are yummy. Didn't need any more salt for me, but DO NOT forget the feta. It makes it. ""

Delicious and easy. I appreciate slow cooker recipes where there's no additional searing or sauteing! Only changes I make to this recipe .... Delicious. Used green kale (because that's all my store carries), mandarin oranges (suggestion from other reviewers and easier to have on hand than mango), and a juiced orange - a little less tart and more sweet than lemon juice. Whole family loves - husband, kids (11 and 7) and even my 70+ dad who thinks kale is just a garnish. "
