I attempted to make this last night. But like you said, it was a nightmare. I followed Ina's directions to a T. It was too cold to roll up. So I will take your suggestion and allow them to cool at room temperature. I also think I let the caramel cook too long. But I did manage to taste one and it was absolutely delicious.
