"The Neelys demonstrate with this recipe why they are known as the best BBQ pro's in Memphis. I have used this recipe and it is not only easy but delicious. For a slightly different profile try fruit woods like peach. Hickory and Oak are traditional but peach and apple give a lighter sweeter smokiness.
