"I love this recipe. I added about 1 or 2 TB schmaltz and about 1/3 cup cornmeal. I form it into a log after mixing everything and wrap with plastic wrap. Chill for 24 hours. When I use it for sausage gravy, I use a potato masher to help break up the sausage in smaller bits. I think the cornmeal helps the texture for doing this."
