"I was unsure about the fried onions on top, but everyone loved them. Loved. Some used regular paprika but I thought the smoked version was perfect with the jalapenos, which weren't at all overpowering. We ran through these like we'd never seen eggs before.

Personally, I'd add a touch of vinegar or caper juice; maybe the picked jalapeno juice. "
