"I just made this last weekend and it was a hit! Not too hard to make and it looks beautiful. I modified the recipe a bit, adding spicy chicken sausage and ground beef instead of pork sausage. Honestly the best parts of this recipe are that 1. It looks more complicated than it is... 2. You could modify it with any kind of filling, which is so versatile and fun.... 3. You can assemble it ahead of time and keep it in the fridge until you're ready to cook. "

Reviewed Meatball Soup

"This is in my permanent file. It is so hearty and filling on a cold night. The cheese lends it a nutty flavor and the meatballs are moist and delicious. The only change I make is to cook the pasta separately because otherwise I think it soaks up too much of the fabulous broth. Excellent Emeril!"

Reviewed Throwdown's Toasted Coconut Cake with Coconut Filling and Coconut Buttercream

"Made this last Christmas and followed recipe exactly. It took a lot of time to put together, but it lent a level of pride to make a recipe so much from scratch -- I felt like I really MADE something!! The cake itself is moist and delicate, with a nice coconut flavor that is not overpowering or too sweet. To the other reviews that say the icing tastes like butter... its true to a point. I made the recipe, so every time I ate a piece I was thinking it was butter, so I tasted the butter. But everyone I served the cake to raved about how delicious it was and ate every bite. All in all I think this cake was very gourmet, unique and had perfectly balanced flavors. "

Reviewed Sweet Potato Cheesecake with Candied Pecans

"I've made this every year for Thanksgiving for the past few years, by request because everyone loves it! It is a BIG moist cheesecake with a subtle sweetness and a great smooth texture. Really, really good. We usually top with chopped candied pecans from recipe, but really any topping would be delicious with this, because the cake itself is so, so rich and delicious. A winner! "

Reviewed Fresh-Mex Corn Wontons

"First, keeping the parts of the filling seperate just seems to be making the recipe more difficult than it needs to be. So, after mixing the filling I decided it desperately needed more flavor. I added a bunch of salt, sugar, extra chopped red onion and cilantro. That improved it immensely. Filling the wontons and frying them was time consuming, but sort of fun and different. So, while being sort of difficult and laborious the end result was both pretty and refreshingly tasty. They ended up being a pretty big hit at the party. I would make them again, but you must add salt and sugar to taste to the filling and be prepared for a long process. "
