Didn't have time to go to the store that sells the dried chilies, so we used 3 serranos, 3 jalapenos, 4 cloves of garlic, 6 (! ancho chiles from the can instead of 3 plus a little extra sauce left over in the can. 4lbs of (somewhat trimmed boneless shoulder from Costco and it's FANTASTIC. This recipe is amazing. Takes time obviously with the brining, but followed it exactly and IT WAS AWESOME. Brined for 18 hours in the bucket in a garage fridge. In at 5pm Wed, turned at 2:00am then drained/rinsed/dried to a fridge tray as we needed the space. Aromatics prepped/placed inside. Oiled with canola. Took a 13.75lb bird just a bit over ...
