"I've made this 2 times now and neither time has the dough risen in the fridge. The first time, I used regular unbleached flour and it eventually rose after I left it on the counter for 18 hours. Then the dough wouldn't stay stretched out, it kept bouncing back. The second time it didn't rise but did better at stretching (I used bread flour this time). What am I doing wrong? My yeast is new and not old."
