Reviewed whipped cream

I like this but it needs a few upgrades. I added powdered sugar, not SUGAR, it does not blend well. Also I added vanilla bean paste, coconut milk, chocolate when I want different flavors I always stabilize it so it keeps it shape and texture in the fridge for a LONG time. To stabilize you can use cornstarch 1T or gelatin powder. I use silver leaf...

Also if you need a soft peak it will have a slight bend or curl when lifted from the bowl. Once you make your own you will never buy it again, also you can stabilize it so it stays for days without weeping or losing it's shape. Hope this helps.

Replied to whipped cream

You can whip half and half until the cows come home and it won't ever make whipped cream. You must use a heavy whipping cream which is usually about 36% butterfat. Half and half is just that 1/2 milk and 1/2 cream so you must use heavy whipping cream to be able to make your own. Once you begin to whip the cream though remember you can go from whipped...

Replied to Cheese Straws

Dec 28, 2013 on FoodNetwork.com

They were almost impossible to squeeze from the bag. I used heavy duty piping bags and it was a mess. I had to throw them out and do my own recipe. There is no need to use SR flour either,AP works fine, it is a simple cheese, butter , flour and seasoning. They are beautiful light and crispy when the ratio is right. I think this is a misprint. For...

I had a girlfriend that used this recipe to the T and it was awful. First of all the entire recipe is not right. The ratio of butter to cheese to flour are all wrong. There is so much butter until all you get is a heavy greasy mess. I used my recipe and you get a light, airy, crispy cheese straw like they are supposed to be. I think maybe a misprint...

I really like the recipe but I changed everything except the amount of flour and butter. I just totally gave it a face lift or I am not sure if I should rate it since I changed so much but I did use it as a guide. It is really simple. I kept the time and temp the same but everything else I changed. So it is a good starting place.

It is just as quick to make them from scratch and so much better texture. Baking mix is not a good idea for these churros. Sorry, somethings you just can't take a short cut on when the recipe is already easy.

Tasty, I had to leave off the ginger and the horse radish. So without those two items it was very good. I made homemade brioche and it was GREAT actually. I entered my name for it so hopefully you will agree."

Very good, I would just add a spoonful of sugar and of course pecans ..lol..I am addicted to the little sweetness and put pecans in everthing or grind them up for flour if nothing else.It is a great recipe though. I think it is so important to HEAT the POPOVER pans!"

I really love the popovers, I had to change the lettuce to Romaine Hearts, also no ginger in popovers. I just do not like ginger at all so I don't use it. Other than that the crabmeat, mangoes and avocados are great!"
