The basis of this recipe is good. But for me, the parsnip flavor is much too intense. I even doubled the amt of potatoes (used 4) and used 3 large parsnips. So for my taste, a ratio of 3 parsnips to 2 potatoes (as written) would have been MUCH too heavy on the parsnips. But hey if you love parsnips go for it. Next time I will try 4 potatoes and 1...

This was really bad. First of all, be sure you have the correct size pot. 3 whole chickens is ALOT! THe chicken sunk to the bottom and burnt, making the entire pot of broth taste like smoke - it was unedible. I would suggest, instead of using whole chickens, which even if they don't burn are a MESS, buy skin-on-bone-in chicken thighs. Much easier "
