"The fresh thyme is an absolute must! I truly think it makes the dish. However, I use a light hand with the smoked mozzarella since a little smoke goes a long way with me. I take little pieces and scatter them across the top lightly, instead of covering the whole thing in slabs.

"First thing: error in recipe! Do NOT add 4 teaspoons of salt! The first batch of 2 teaspoons is more than enough - 1.5 is actually better. That's my only complaint - this is the best salad ever. It's beautiful and it tastes great!
P.S. - If fresh corn is out of season, canned white shoepeg corn is an excellent substitute.
