Terrific! My spice adverse boyfriend thought the salsa was a little too hot, but I liked it. I used Gimme Lean (12 oz) and SoyRizo (12 oz) instead of ground beef and chorizo. I calculated the nutritional information for my vegetarian version of the whole meatloaf (not including the salsa glaze), as follows:

Good solid comfort food. I used chicken broth instead of mushroom and unsweetened almond milk instead of whole milk (just use a little extra flour to make sure it will thicken when you add the liquids). Turned out great.

Great! This was a quick and easy hit I used skinless red snapper fillets and rubbed them with chinese five spice powder (in addition to the salt and pepper) to give them more flavor. I also cooked the fish in sesame oil, as opposed to vegetable oil. The fish came out great :-) And, so did the couscous and salad. The whole meal took me just a little...
