There should be Chinese cooking rice wine or dry sherry in this recipe, and NO EVOO for Christ's sake, regular vegetable oil or peanut oil. I love EVOO, but this is Chinese food, the Chinese NEVER use EVOO, probably because EVOO has a pretty strong, distinctive flavor and I'd imagine the flavor would adulterate and overpower the dish.
