This was a much simpler version of eggplant parmesan, and lighter without the usual frying. Next time I will remove the skin as the texture was tough, and the flavor a little bitter. I didn't have the fresh basil so had to go without that. I'll use it next time as I'm sure it adds a great flavor to the dish. I'll definitely make this again."
