"This was a much simpler version of eggplant parmesan, and lighter without the usual frying. Next time I will remove the skin as the texture was tough, and the flavor a little bitter. I didn't have the fresh basil so had to go without that. I'll use it next time as I'm sure it adds a great flavor to the dish. I'll definitely make this again."

"I love baking bread but sometimes don't have the time for rising and waiting. This recipe however is just as good (if not better than a risen bread. It's so easy, so quick and sooo tasty!! I prefer raisins than currents, so always add those iinstead. Grated orange rind added to the batter adds just the right amount of lightness to this recipe"

"The taste was ok, but they were more like wilted sweet potatoes than " fries". No crispiness to be found anywhere!! Next time I will try pre heating the baking sheet. That seems to give a head start to the roasting process. "
