Reviewed Pappardelle With Corn

Aug 13, 2013 in Food Network Community Toolbox on

Fantastic!! Next time I'll add some chicken or shrimp just for a little protein. I made it last week, and am making it again tonight!! I couldn't find pappardelle, so used bow ties. Probably any flat pasta will do. "

Reviewed Mama Thornton's Peach Pie

Jul 21, 2013 in Food Network Community Toolbox on

This is a very tasty pie. It probably would have been perfect if I didn't try and mess with the filling recipe. I only had about 5 cups of peaches, so added a pint of blueberries. I thought that was a pretty good idea. So then I thought...well these are really juicy peaches and blueberries have quite a bit of juice, so I'll put it 1 cup of flo"

Reviewed Grilled Chicken Breasts with Spicy Peach Glaze

Jul 10, 2013 in Food Network Community Toolbox on

Made this last night using boneless chicken breasts as I was unsure what "Frenched" meant (explain please). It was fabulous! I served it with plain couscous and added a bit of the Peach Glaze to that, which was terrific. Just the right amount of sweet and spicy in the recipe. The grilled peached were tremendous, especially because they are now "

Reviewed Blueberry Crumb Cake

Jul 3, 2013 in Food Network Community Toolbox on

This was fabulous!! There is, as one post said, a LOT of crumble so I didn't use it all. There is so much, I ate it with a spoon out of the pan after a slice was taken. The cake is terrifically moist. I did have to bake it longer than the suggested 50 minutes, and there were still spots where it seemed a bit undercooked even though I continued"

Reviewed Chicken Enchiladas with Roasted Tomatillo Chile Salsa

May 11, 2013 in Food Network Community Toolbox on

In a word, AMAZING!!!! I'd never used tomatillos before, and quite frankly didn't know what to do with them. This recipe is so clean and fresh tasting! I made it twice within 2 weeks. At first I thought the salsa was a bit too hot, but when used as the recipe called for it was absolutely PERFECT!! I used a whole chicken that I cooked ahead of "

Reviewed Eggplant Parmigiana

Mar 4, 2013 in Food Network Community Toolbox on

This was a much simpler version of eggplant parmesan, and lighter without the usual frying. Next time I will remove the skin as the texture was tough, and the flavor a little bitter. I didn't have the fresh basil so had to go without that. I'll use it next time as I'm sure it adds a great flavor to the dish. I'll definitely make this again."

Reviewed Irish Soda Bread

Mar 4, 2013 in Food Network Community Toolbox on

I love baking bread but sometimes don't have the time for rising and waiting. This recipe however is just as good (if not better than a risen bread. It's so easy, so quick and sooo tasty!! I prefer raisins than currents, so always add those iinstead. Grated orange rind added to the batter adds just the right amount of lightness to this recipe"

Reviewed Baked Sweet Potato "Fries"

Feb 12, 2013 in Food Network Community Toolbox on

The taste was ok, but they were more like wilted sweet potatoes than " fries". No crispiness to be found anywhere!! Next time I will try pre heating the baking sheet. That seems to give a head start to the roasting process. "

Reviewed Baked Rice Pudding

Jan 18, 2013 in Food Network Community Toolbox on

This is a very easy recipe and probably be much better if I had not decided to use Almond Soy milk instead of whole milk.. I'm going to try it again and follow the recipe. The other note is to be sure to add the cinnamon and nutmeg after baking. I didn't do that either and the spices floated to the top in a great mess. I should know better. Onl"
