I just took these out of the oven! Chocolate-coffee delicious! Make sure you grind the chocolate covered espresso beans well in order to keep them from taking on too much 'coffee' flavor. Mine turned out just perfect, I love the crackle look on the top! So fudgy!"

Easy and fast cupcake. I used 1/4 cup all-purpose flour instead of buying almond flour. They tasted perfectly wonderful, so the point of using the quinoa flour or almond flour is beyond me. I'll have to try it the next time I buy some to see the difference. I'll post when I do. I also used lactose free milk instead of the whole milk. So many more "
