"Made this last wk for a girls fall wk dinner night and everyone LOVED it! Had to make some adjustments to the cider/vinegarette - add a bit more mustard becuase the oil seemed a little to strong, but that is just all to taste and depending on how you like your dressings. Otherwise, was perfect, so full of flavor and it was all eaten up in a jiff"

"I have made these several times and will be again soon. Never did use the pizza dough, I used TJ crescent rolls.Don't think it really matters what pastry type you use. Every time these are such a hit. Easy and they taste like you slaved over them! Thx Giada!!"

"This was actually very good. The only thing different is I added a bit more garlic but other than that it was very tasty. You can taste the eggplant the tomato and the mint. It was a perfect balance of all the ingredients. Just make sure you season your veggies prior to roasting them - so their flavor comes out! Great job Giada, AGAIN!""

"These panini's were great! Made them cause the weather just called for it. Perfect confort food. Did them like the recipe called for except I brushed the bread with the left over butter that I carmalized the apples with. Added extra flavor and crunch!
I am a foodie and love to try new recipes from the most basic to the semi complicated! My biggest thing is to entertain and have people over all the time for no reason at all. Life is too short not to enjoy it with great food and good friends!
