Johns@allstate, did you let the chicken sit on a rack for a minute before frying? Anytime you either pan fry or deep fry, need to let the flour have a few minutes to sit on the meat before putting in the hot oil. Learned that the hard way with pork chops--not pretty. Great recipes as always Ina. "
