My Activity

Reviewed Lentil Burgers with Lemon-Basil Mayonnaise

"I tried these last night. They were a lot of work and resulted in a very bland taste. I had to add a lot more oil to the pan to get them crunchy enough to not be mushy and by that point, they aren't very low fat. If it weren't for me adding pesto to the mayonnaise, there wouldn't be much taste to these. I did, however, make her vegetarian tostadas"

Reviewed Roasted Vegetable Tostadas with Chipotle Cream

"I made them on Monday night and they were FANTASTIC! My husband and I loved them! No modifications to the recipe needed. The different textures of the soft butternut squash, crunchy tostada and creamy sauce makes it yum, yum, yum!! You don't even miss the meat. Very healthy and filling! Will definitely make again!"

Reviewed Lemon Bars

"I made the mistake of thinking these were bars...a finger food like other lemon bars. I made these for a church function and it was a disaster. I ended up cooking them a lot longer than stated in the recipe just for the filling to set. After cooling, they still were not the consistency of bars but more like lemon pie. In trying to cut them into squares, triangles, they were gummy and runny and fell apart. The flavor is great but the consistency was far from being a lemon bar. I think if I make this again, I will add corn starch or more flour to try and firm up the filling. Just warning anyone who needs to make a finger food. This is NOT it.
