Reviewed Roasted Curry Chicken Thighs with Yogurt Cumin Sauce

Oct 7, 2011 in Food Network Community Toolbox on FoodNetwork.com

chicken thighs were very juicy while having a nice crisp skin! I hadn't worked with the red curry paste, so was a bit worried it would be too spicy, but it wasn't at all...good flavor. Next time, I may be a bit more adventurous with the spice. Didn't really need the yogurt sauce.""

Reviewed Scallops with Mint Chutney

Jul 18, 2011 in Food Network Community Toolbox on FoodNetwork.com

The texture of my chutney turned out right, but it was very strong in flavor. I felt that it overpowered the scallops. Will give the chutney another chance with something else maybe, but not with the scallops."

Reviewed Roasted Grape Tomatoes with Tangled Noodles

The flavor of this dish was good, except I would probably substitute a different cheese next time for my personal taste preference. And my noodles were also a bit sticky, and I had to add extra broth to prevent them from being in a glob. I had to make fast work of the noodles, so next time, I will boil the noodles, then add everything together. "

Very easy and very yummy. I have now made this twice, once for a family cookout and another time when the girls came over for dinner. A hit both times! Both adults and kids enjoyed! My husband enjoyed the leftovers...he felt adding a tiny splash of milk when reheating worked better."

This was delicious! I made it for a dinner with a bunch of girlfriends tonight, and I brought home an empty dish! Everyone liked it. I was a bit nervous about simmering the can for 3 hours (b/c of the warning on the label), and didn't want to even walk the dog while it was on the stove, but it turned out great! I even used the Fat Free sweetened condensed...

love this idea! Super simple and great treat if you are trying to reduce calories. I had trouble with the texture at first, but once I added the honey, it smoothed out nicely!

Reviewed White Chicken Chili

This was such a wonderful, flavorful dish!! A big hit in my house. I have even passed on the recipe to a couple folks already! I may have been a bit heavy-handed with the spices, but it was a wonderful flavor combination! And quick!!

Reviewed Layered Shrimp Salad

I never would have thought of putting all this together, but it was wonderful!! Colorful, flavorful, and even my friends that don't like tomatoes enjoyed the other layers! Very yummy and very easy!!

Reviewed Grilled Corn Slaw

Oct 17, 2010 in Food Network Community Toolbox on Food Network

I made this meal, and the slaw was very yummy on the tacos. I did eat leftovers of the slaw as a side dish, and didn't like it as much as a side dish. I tried it with and without the greek yogurt. But on the tacos, it was all a great combination!!

Reviewed Chipotle-Lime Chicken Tacos

This chicken was so easy and so flavorful! The crema and chipotle peppers in adobo sauce were yummy with just the right kick! The slaw was yummy on the tacos, but when I ate the leftovers as a side dish, it was good, but not as good. Great combination of flavors!

Reviewed Spicy Baked Chickpeas

Oct 17, 2010 in Food Network Community Toolbox on Food Network

Tried this tonight with some hesitation after reading the reviews. I did go a bit heavy-handed on the spices and added some garlic powder, and I cooked them longer...probably 45-50 minutes. Some of mine got crunchy, and some did not, but I thought they were still something different besides nuts to snack on. I did not experience in "chickpea popping"...

Reviewed Rioja Steamed Mussels with Chorizo

Oct 17, 2010 in Food Network Community Toolbox on Food Network

Made this tonight for appetizer night, and my husband, girlfriend and her mother really liked it! My friend's mother had never had mussels before, and I hadn't cooked them before, so this was a great dish to start with. The chorizo added lots of flavor. Will definitely try again, and it is an easy recipe to change around and "BYOC" as Claire would...

Reviewed Baked Fresh Ricotta with Olives

Oct 17, 2010 in Food Network Community Toolbox on Food Network

Fixed this tonight for my husband, a girlfriend and her mother, and was a bit nervous after reading some of the reviews.(actually had appetizer night and fixed all 3 recipes from the episode) I fixed according to the recipe except baked it at 400 (was cooking something else at 400)for approximately 50 minutes or so. Mine did not brown as well as hers...
