"This dish is fantastic and really not all that difficult. It just takes a bit of multi-tasking (and a lot of dishes to clean up. I doubled the recipe for Christmas Eve in a 13x9 pan since I was having an open house with about 25 people coming. I layered the bottom of the pan with eggplant, followed by the pasta, and topped with more eggplant then cut it like a lasagna. It was a huge hit and I received a lot of compliments. I've also made it in the spring form pan for a smaller crowd - it's always a crowd pleaser!!!
