I just made this! It literally took about 20 minutes start to finish. I'm letting it simmer now to develop the flavors. One change I made was to add cornmeal instead of flour. It thickens it a bit and gives it that yummy cornmeal taste, without actually making polenta. Love polenta, but not so keen on quinoa. Will serve it with good tortilla c"
