Delicious! I marinated the fish for over an hour and substituted frozen corn (just mixed it into the rice at the end of its cooking) for the pineapple. Also used brown rice instead of white to make it even healthier-just remember that brown rice takes longer to cook than the recipe says. This recipe is great but I wouldn't recommend it for a quick"
