Reviewed Indian Summer Stew: Butternut Squash, Coconut, and Lentil Stew

"I thought this stew was unbelievable. I had to make a few alterations. I couldn't find yellow split peas so I used green. I didn't have shredded coconut, only flaked. I used water instead of vegetable broth due to allergies. Despite these little differences, my stew came out wonderful. It had a nice little kick from the red pepper flakes, but not too hot. Then there was a little sweetness from the honey. The lime added some great flavor at the end. I definitely recommend making it as is before changing it around. The only drawback is that I did have trouble with the mustard seeds popping out of the pan when they were heated, but I think my oil was too hot. I will be making this again for sure.
