This recipe is so SO good. I made this as an appetizer for Thanksgiving and then again on Christmas day. Everyone always raves about it. I could eat the filling just plain. It is delicious and one of my new favorite appetizer recipes.

These were very good enchiladas. However, there are a lot of steps and my kitchen was a mess. I have a small kitchen too so I ran out of room. I think if you have a large kitchen and a lot of room to work, these might be easier to make. They were still very good enchiladas, I just think I may look for a simpler version in the future."

I love pea soup. This soup was SO easy and really delicious. The whole thing took less than 20 minutes. I used store bought chicken stock and it was just fine! I also used an immersion blender.
