I had the same problem my first time preparing this recipe. If you place a cup of water (or broth) at the bottom of your roasting pan, you won't have any "smokey" issues!

If you add about a cup of water to the bottom of your roasting pan before cooking at 500 degrees, that should solve your smoke problem...it works for me!

Yes, I did follow the directions and had no issues. However, I do extend cooking time a bit. When the probe indicates 161 degrees, I continue cooking for about another 15 - 20 minutes longer to allow the dark meat to cook. I've found it does not dry out the breast meat which I always cover with heavy-duty foil, doubled. I also rub a mix of butter...

I always place about 1 cup of water in my roasting pan to avoid that problem...good luck!

I've prepared our Thanksgiving turkey using Alton's recipe for 5 years and it always turns out delicious! Just finished the first 30 minutes of cooking and turned the temp down, placed the foil over the breasts, placed the temperature probe in and closed the door! I've no doubt this turkey will be as tasty as the others! Thank you Alton! :)
