Reviewed zucchini parmesan crisps

I made these last night with a fresh from the garden zucchini and they are very tasty. I cut the slices a little thinner than 1/4 inch and tossed well in the olive oil. Crumbs coated the slices very well. Hold the salt! The parm has plenty. Should have known that. Will definitely make these again. Crispy and delicious!

I harvested the first zucchini of the season yesterday and put it in this recipe. I added some red pepper flakes to kick it up a notch and used a sweet Vidalia onion and held out the sugar. Very tasty, and easy to make. I have a feeling this recipe will become a staple! Thanks a ton!

I'm all in with 5 stars for this recipe! It's easy to make, nutritious and above all..... DELICIOUS! The fingerling potatoes are easy to make but you can sub in reds, whites etc. The peppers suggested bake up so sweet and wonderful! I grabbed a white onion by mistake, but it still works. I will definitely make this again! And since I used a Teflon"
