Reviewed Chicken Enchiladas

"EXCELLENT! I made it last night for the first time and everyone loved them!!

Very easy. So fast with a food processor to chop everything before you begin or while chicken is cooking. I pureed my onions and garlic and really liked the consistency in the final mixture. Used rinsed chipotle peppers in adobo sauce for a hint of smoky flavor. Added a bit of chicken broth to the vegetables. Corn tortillas must be pretty hot or they will break when you roll them. This makes a HUGE batch, but mixture freezes nicely.

FYI: you can't buy Mexican Spice Blend in the spice section at the store. The recipe is very easy, but look it up before you go to the store.

Reviewed Fabulous Red Velvet Cake

"I am an experienced cook and baker, & made hundreds of cakes perfectly, but this was HORRIBLE! By far the worst cake, or anything else, I've ever made. I followed the suggestions & used more cocoa & oil not shortening, but otherwise followed exactly. It came out like a fallen souffle and the consistency of a very dense dry brownie with the edges raised. I've never seen anything like it. It wouldn't come out of the greased pan either. We threw it in the trash. I can't imagine that I did something wrong as I'm very careful and precise, but maybe I did because this can't be the correct recipe. I LOVE red velvet cake and have to find some way to redeem myself after this mess. Good luck to everyone else though, maybe it really was just me that was the problem...?
