MMMM. I must make my "globs" smaller than Ina does, because I got 30 cookies per recipe. Tripled the recipe (big party tonight) but probably could have just doubled it and still had enough for 40 people. Out of unsweetened chocolate, but I had plenty of dark chocolate chips, so just used those. The espresso powder is key. Not too sweet. Can't wait...

I think the problem might be that you're not beating the egg mixture long enough (until it becomes thick and falls in ribbons). I needed an extra minute on mine to get it to the right consistency. You also might be adding the chocolate mixture when it's still a little too warm. Hope these tips work for you, because they really are amazing cookie...

This is ridiculously wonderful and has much less fat than the traditional spanakopita (the ratio of spinach to phyllo/butter). It goes together so quickly that I didn't even need to use a damp cloth to keep the phyllo moist between layers. Served it with Ina's shrimp and fennel dish; the flavors complemented perfectly. Thank you Ina.
