"I have eaten this dish before with mushrooms and loved it.Here I substituted 2 cans of cream of mushroom soup for the mayo and switched heavy cream for the sour cream.I did not use bread crumbs but used sliced fresh mushrooms instead and also used fresh Parmesan cheese on top.I cut my chicken into bite size pieces to make it easier to eat and mixed them with the spinach,then added that to my sauteed shallots,garlic and mushrooms. As a nice finishing touch I placed my entire dish in a casserole dish and placed it under my broiler to allow the cheese to melt on top.Final rating from my family was a 9.5 so I was extremely happy
