This was so easy and is the best pot roast I have ever made. I think the secret is to cover the roast with all the mushroom mixture and that keeps it moist and tasty! I always put my carrots and potatoes in with the roast so I just removed them, let the roast rest and hit the sauce with my emersion blender.

I love Alfredo and have eaten a lot of it and I have to say this rates right up there with the best! Yes, it was a little thick so you can thin it with some pasta water if you desire. The flavor was great and I also recommend doubling the recipe. I have a family of 4 and by doubling it we had just enough left for 2 average sized lunches.

THESE WERE SO GOOD!!! I have never had a drumstick so tender and juicy. The only complaint was the skin didn't crisp up to my liking but next time I will drop them in some hot oil or hit the broiler for a few before removing from the oven. In spite of not being crispy we still ate the skin because of the fab flavor it had. "

Very flavorful. I couldn't get the sauce to thicken very well but it tasted good in spite of being a bit thin. Loved the pistachio coating but the amount of nuts I had to buy to make enough to serve 6 was a bit expensive for a coating. Think I'll try pecans or almonds next time.
