Reviewed Gina's Drunken Goat Grilled Cheese

"With reference to the previous reviews, Drunken Goat cheese is a semi-soft goat cheese immersed in red wine and you can usually find it at Krogers, Farm Fresh and occasionally at your local Costco. I live in Virginia so those are all our local grocery stores. The cheese has a bit of tang to it and melts quite easily. I am not much on arugula so I used baby spinach plus a touch of sugar in the shallot mayo to make it a bit sweet (it added depth to the shallot mayo (not quite so strong if you are not a fan of shallots/onions). I loved the grilled cheese but then again, there are very few cheeses I don't like.
