This was a delicious recipe. I made it with a moose roast that I had and it was superb! The moose is very, very lean and needs lots of moisture from other ingredient, and this recipe fit the bill. I actually used a shallot in place of one of the onions - worked out very nicely.

jcemek - I made Alton's turkey last year and the drippings were fine for making gravy. I just did not add any more salt to the gravy until I had tasted it. I also wanted a lot of gravy so I added more liquid that was unsalted (boiled neck and gibblets cooked w/ diced carrots celery etc.. I will be adding the drippings today to Tyler's gravy recipe...

I used this as the base to add liquid to the regular "drippings" gravy from a brined bird - over the top!!!!!!!! These were excellent!!!!!!!!!!! We voted on not adding the mustard (too chicken), but next time I think I'll also add some greek style yogurt in the mashing stage. Again, this was an excellent. I am never disappointed by Tyler's recipes. Tyler u da man!!!!!!!!
