Reviewed Minestrone Soup

"AMAZING. I followed the recipe fairly closely except that I used a 28 oz. can of crushed tomatoes rather than a 14 oz. one, simply because that was what I had and I didn't feel like splitting it in half. My soup looks much darker, thicker, and generally more tomato-ey than the soup in the picture, but I love anything with tomatoes, so I don't mind. The flavor of this soup is amazing, the amount of pasta and beans is perfect, and although it took me longer to cook than expected, it was very worth it! Will make again!
