"Delicious. I really like this. I had to make a few changes because I didn't have vanilla or cake flour. So I substituted almond extract for the vanilla. For the cake flour I substituted 1 3/4 flour plus 1/4 cup corn starch sifted together (actually I used a whisk to blend to make the 2 cups of cake flour substitute and 3 bananas instead of two. I only had to cook mine for 1 hour. Really good, very moist. I'm quite happy with this recipe. I was getting a bit bored with my old recipe.
