This is a kid (and adult) friendly dish that's always a hit. I've made it twice now and both times it turned out well and was well received. I usually have frozen spinach instead of fresh on hand and it works well. I also throw in some frozen peas which gives it a nice pop of sweetness. "

This was pretty tasty. My guests were 3 and 5 yrs. old so they were pretty discerning. I added a bit extra cheddar and substituted mozzarella for the Monterey Jack, since it's what I had on hand. I also used a 15 oz. can of butternut squash puree. It came together nicely and had really good flavor. I would make this again.
