Reviewed Lemony Shrimp Scampi with Orzo and Arugula

Made it for the first time tonight. Good. Not great. Needs (for my taste anyway) a little lower lemon level and a little higher arugula (mixed with spinach would be good, as others have suggested). Added some red pepper flakes to the shrimp saute and also some grated parmesan on top when we served our plates and both were good additions. I think i"

this is an excellent recipe....but after making it about a dozen times and playing with the ratios what is magic for my family includes doubling the garlic (I actually used 16 cloves tonight), double the anchovy, double the red pepper. I use the same cooking times as the recipe, but add some white wine - about 1/2 cup - to the garlic and anchovy s"

I love Ina's recipes and have almost always had much success with following the recipe exactly as is. Most other recipes (I think) go very light on seasoning, but hers tend to hit pretty close to my liking. And my family members, as well.

Also, I pulled some fresh thyme out of the garden and chopped it to put on the chicken before I grilled it. Which was delicious. One thing that is"

Lacking....something. I added 3 more garlic cloves (what's a pesto without lots of garlic?), but stuck to the recipe, otherwise. I didn't use the jalapeno seeds because some of my family members are a bit sensitive, but it definitely needed more of a kick. Perhaps a squeeze of lemon would add some brightness. I'll tweak it a bit more next time. "

Reviewed Chicken Scallopine with Sage and Fontina Cheese

This sauce is perfection! The white wine with the san marzano tomatoes seems almost too simple, but don't be tempted to add anything extra. The sauce is a perfect backdrop for the sage and fontina in the chicken. My boyfriend was leary about the sage, he's pretty picky. Loved it! Asked me to make it for him for his birthday! :)
