Oh my. Enjoyed as is with vidallia onion instead of red. Next time will add in bell pepper dice or corn from the Cobb for extra crunch. We had this with Alton's Grilled Pork Tenderloin. Going into the rotation for weekend bbq for spring/summertime."

Made this tonight for dinner. Marinaded this morning before work and grilled when we got home. The balance of sweet and heat is addictive (not too much heat). My 5 1/2 and 8 yr olds even ate it. We had with Grilled Zucchini and Bean Salad recipe and it was an awesome pairing. Will put this into the spring/summertime weeknight rotation. Kids "

Can't believe how good it was!!! Thanks to the previous reviews, I peeled the eggplant, sliced it thick, salted and let it sit while I put the rest of the ingredients together. I had one eggplant but made the full filling amount even swapping out the egg for Eggbeaters. Added a box of chopped spinach that I drained and the smells in the kitche"
