This was fantastic. I was looking for a new way to prepare black beans. I doubled the beans since I didn't have the pepper and I was making corn on the cob so didn't want to add corn. The dressing is terrific. My family loved it!

I really wanted this to work. Seems like others have had the same problem I had - ending up with pink sweet coconut. I'd love for someone to give some suggestions of where we shredded coconuters went wrong. I'd love to try again but not sure what to do differently. I added less coconut as other reviewers suggested.
