Love this. I used fresh vegies from the farmer's market. As with all things Ina the fresher the better. I would do salt, pepper, cream, and cheese to taste. Chicken stock to how thick you like it. I wouldn't do as much broth when roasting. I think the more carmely googey good stuff you can scrap into the blender/food processor with the vegies...

Reviewed Rack of Lamb Persillade

Another great recipe to keep on hand. Quick and delicious. I only used one large rack of lamb and probably put too much of the bread mixture on top. When in doubt, just coat it. The butter crisps it up nicely. I also undercooked it as per other chef's suggestions but felt it was undercooked. The time she gives is probably just perfect.
